Chocolate Chip Ice Cream Sandwiches

Treat yourself to these delicious Chocolate Chip Ice Cream Sandwiches! Soft, chewy cookies filled with creamy vanilla ice cream create the perfect dessert for warm days. Easy to make and fun to enjoy, these sandwiches are sure to delight everyone!

INGREDIENTS

  • Cookie Dough:
  • 2 sticks butter, softened
  • ¾ cup white sugar
  • ¾ cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • Pinch of salt
  • 2 eggs
  • 2 cups dark chocolate chips
  • Ice Cream:
  • 1-gallon premium vanilla ice cream

Method:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, cream together the softened butter, white sugar, brown sugar, and vanilla extract. Alternate adding the flour and one egg at a time. Fold in the dark chocolate chips until well combined. Allow the dough to rest in the refrigerator for 30 minutes before scooping.
  3. Using a 3 oz cookie scoop, portion out the dough onto baking sheets, placing 6 to 8 cookies per sheet. Bake for 9-11 minutes, then repeat until all the cookie dough is baked. Allow the cookies to cool completely before filling.
  4. On a clean surface, turn half of the cookies upside down and set the other half aside.
  5. Let the ice cream sit at room temperature for 5-10 minutes until scoopable. Scoop 4 to 5 oz of ice cream onto the upside-down cookies, smoothing it out. Place the second cookie on top of the ice cream and gently squeeze the sandwich together.
  6. Work quickly to assemble all the ice cream sandwiches. Wrap each sandwich individually in plastic wrap and place them in the freezer for at least 12 hours, preferably overnight.
