- 14 oz Center Cut New York Strip steak.
- 1 lime
- 1 whole clove of garlic
- Wedge of blue cheese
- Tube of wasabi
- Salt and pepper
- A dollop of butter
Step 1: Allow the steak to come to room temperature. Generously season the steak with salt and pepper.
Step 2: Preheat your grill to medium-high heat. Cut the lime in half and set it aside. Slice the top off of the garlic clove. Place it on a piece of foil and top it with a dollop of butter and a sprinkle of pepper. Wrap the garlic securely in the foil.
Step 3: Once the grill is hot, place the lime halves (cut-side down) and the foil-wrapped garlic on the grill. Allow the lime and garlic to grill for about 5 minutes. Place the New York strip steak on the grill and cook it to your desired level:
- Rare: About 2-3 minutes per side
- Medium Rare: About 3-5 minutes per side
- Medium: About 5-7 minutes per side
- Well Done: 8-10 minutes per side
Step 4: After grilling, transfer the steak to a plate and let it rest uncovered for at least 5 minutes. This allows the juices to redistribute within the meat.
Plate the rested steak and squeeze the grilled lime over the steak for a unique, citrusy charred flavor. Spread some wasabi on the steak for a spicy kick then crumble the blue cheese over the steak for a tangy, creamy contrast.
Unwrap the garlic from the foil and spread it on the steak or serve it on the side as a rich, buttery accompaniment.
