  • 1 cup Butter Cold and Cubed
  • ½ cup Sugar
  • 2 tsp Vanilla Extract
  • 2 cup Flour
  • ¾ cup Mango Jam

Step 1: Preheat oven 365 degrees. Then with a standing mixer, using the paddle attachment, place the cold butter into the bowl and start to beat on medium speed. Slowly add the sugar and blend for 3 minutes.  Scrap down the bowl.  Add vanilla and one cup of flour and mix.  Scrap bowl again and add remaining flour.

Step 2: Prepare your 8×8 baking pan with non-stick press or parchment paper.  Press 2/3 of the dough into the baking pan evenly.  Bake for 10 mins.  Remove from the oven and spread the mango jam evenly over the dough.  Crumble the remaining dough over the jam and return to the oven.  Bake for 35 to 40 minutes or until golden brown.  Allow to cool completely in the pan before removing and cutting into squares.
