Chicken & Sausage Stuffed Baked Shells

INGREDIENTS

  • 1 box Large Shell Pasta
  • 6- 8 pc. Boneless skinless Chicken Thighs rough chop
  • 1 lbs. Ground Sausage meat
  • 1 small Onion small diced
  • 5 cloves Garlic minced
  • 1 small pack Baby Spinach rough chopped
  • 6-8 Leaves Fresh Basil
  • 1 cup Grape Tomatoes sliced halved
  • 3 cup tomato sauce (homemade)
  • 1-pint heavy cream
  • ¾ cup mozzarella Cheese
  • ½ cup Parmesan Cheese
  • ¼ cup Olive Oil
  • Salt and Pepper to taste


Step 1: Pre-heat oven 350 degrees then in a large stock pot fill will water, add salt and bring to a boil.  Add pasta and cook for about 6- 8 minutes.  The pasta should be andante.  Strain and rinse with cold water to stop the cooking.  Set aside for stuffing.


Step 2: In a large skillet, on med-high heat, brown the chopped chicken thighs until cooked. Remove from the pan and set aside in a large bowl.  In the same skillet, brown the sausage meat then add the onions & garlic until cooked.  Add the spinach and season with salt and pepper and cook until wilted. Remove from the skillet and add to the large bowl.

Step 3: Place the skillet back on the stove with a small amount of olive oil and blister the tomatoes. Add the tomato sauce and cream. Season with salt and pepper and simmer for 5-8 minutes.  Add ½ cup of sauce to the meat mixture.  Stir until coated.  Take a cooked pasta shell and stuff ¾ full with the meat mixture and place.  Place 1 cup of sauce on the bottom of the casserole dish.  Continue to fill and place the pasta in the casserole dish until completed.  Pour the remaining sauce over the shells and sprinkle with the mozzarella cheese and parmesan. 

Step 4: Cover the casserole dish with foil and place in the oven for 30 minutes.  Remove the foil and cook for another 10- 15 minutes or until cooked and cheese is melted light golden brown. Once removed from the oven, allow to rest for 8-12 minutes and serve.
